  • 2 large spaghetti squash
  • 2 cups broccoli florets
  • 2 tablespoons olive oil
  • 1 jar (16 oz) Alfredo sauce
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat oven to 400°F (204°C).
  2. Halve the spaghetti squashes, scoop out seeds, drizzle with olive oil, and place cut-side down on a baking sheet. Prick the skin for even cooking.
  3. Toss broccoli florets with remaining olive oil and spread on the baking sheet. Roast for about 30 minutes until squash is fork-tender and broccoli is lightly browned.
  4. Once roasted, scrape out squash strands into a large bowl. Mix with roasted broccoli, Alfredo sauce, and half of the mozzarella cheese.
  5. Transfer mixture to a casserole dish, top with remaining mozzarella, and broil for a few minutes until golden brown.
