- 2 large spaghetti squash
- 2 cups broccoli florets
- 2 tablespoons olive oil
- 1 jar (16 oz) Alfredo sauce
- 1 cup shredded mozzarella cheese
Instructions
- Preheat oven to 400°F (204°C).
- Halve the spaghetti squashes, scoop out seeds, drizzle with olive oil, and place cut-side down on a baking sheet. Prick the skin for even cooking.
- Toss broccoli florets with remaining olive oil and spread on the baking sheet. Roast for about 30 minutes until squash is fork-tender and broccoli is lightly browned.
- Once roasted, scrape out squash strands into a large bowl. Mix with roasted broccoli, Alfredo sauce, and half of the mozzarella cheese.
- Transfer mixture to a casserole dish, top with remaining mozzarella, and broil for a few minutes until golden brown.
