Ingredients
- 2 cups digestive cookies or graham crackers
- 6 tablespoons butter (melted)
- 3 cups fresh apple cider
- 3 bricks cream cheese (softened)
- 1 cup brown sugar
- 1 cup sour cream
- 3 large eggs
- Mulling spices
- Cinnamon
Instructions
- Boil apple cider with mulling spices for about 1 hour until reduced to approximately 1/3 cup. Set aside to cool.
- Preheat oven to 350°F (175°C). In a food processor, pulse cookies until fine, then mix with melted butter, salt, and powdered sugar. Press into an 8” springform pan and bake for 10 minutes; allow to cool.
- Lower oven temperature to 325°F (160°C). Beat cream cheese and brown sugar until smooth. Add sour cream, vanilla extract, salt, cinnamon, and cooled reduced cider; mix well. Incorporate eggs one at a time and add flour; mix gently.
- Pour filling into cooled crust in a water bath and bake for about 90 minutes until edges are set but center remains slightly wobbly.
- Turn off the oven and crack the door open; let cool for about 30 minutes before refrigerating for at least 8 hours before serving.
