  • 2 lb boneless skinless chicken thighs
  • 6 garlic cloves, thinly sliced
  • 1 piece ginger (3 inches), peeled and finely chopped
  • 1 bundle scallions (6 to 8 oz), divided into whites and greens
  • 4 tsp kosher salt
  • Freshly ground black or white pepper, to taste
  • 10 cups water
  • 8 oz dried ramen noodles or curly noodles
  • 1 cup carrot, cut into thin matchsticks
  • 1/4 cup black rice vinegar
  • 1/4 cup soy sauce
  • 2 tbsp toasted sesame oil

Instructions

  1. Slice garlic and chop ginger finely. Divide scallions into whites and greens.
  2. In a large pot over medium heat, add water and chicken thighs; season with salt and pepper. Bring to boil, then simmer for 15 minutes.
  3. Remove chicken; add garlic, ginger, and white scallions to the broth and simmer for 5 minutes.
  4. Shred chicken and return to pot along with noodles. Cook according to noodle package instructions.
  5. Stir in carrots, vinegar, soy sauce, and sesame oil; adjust seasoning if needed.
  6. Serve hot garnished with green scallions.
