  • 1 tablespoon fresh grated ginger
  • 3 tablespoons lime juice
  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon honey or maple syrup
  • 1/2 cucumber, thinly sliced
  • 1 bell pepper, thinly sliced
  • 1 medium carrot, grated
  • 2 green onions, finely chopped
  • 1/4 cup fresh cilantro, roughly chopped
  • 1/4 cup fresh mint leaves, roughly chopped
  • 1/4 cup crushed peanuts

Instructions

  1. Cook rice noodles according to package instructions; rinse under cold water and drain.
  2. In a small bowl, whisk together ginger, lime juice, soy sauce (or tamari), honey (or maple syrup), and sesame oil (if using).
  3. Chop vegetables and herbs as directed.
  4. In a large bowl, combine the drained noodles with all the veggies and herbs; toss with the ginger-lime dressing until well coated.
