Ingredients
- 3–4 lbs organic chicken (skin removed)
- 2–3 Tbsps Jamaican Green Seasoning
- 2 Tbsps Jamaican curry powder
- 1 (14 oz.) can full-fat coconut milk
- 1 cup low-sodium chicken stock
- 1–3 scotch bonnet peppers (to taste)
- Vegetables: potatoes, carrots, bell pepper
Instructions
- Cut chicken into equal pieces and rinse under cold water.
- In a bowl, marinate chicken with Jamaican Green Seasoning, curry powder, salt, smoked paprika, and brown sugar for at least 30 minutes.
- Heat olive oil in a pot over medium heat; brown marinated chicken on each side and set aside.
- Sauté garlic, ginger, carrots, bell pepper, green onions, potatoes, scotch bonnet peppers, and thyme in the same pot for about 5 minutes.
- Return the chicken to the pot; add coconut milk and chicken stock; bring to a boil then reduce heat to low.
- Cover and simmer for about 30 minutes until chicken is fully cooked.
