  • 34 lbs organic chicken (skin removed)
  • 23 Tbsps Jamaican Green Seasoning
  • 2 Tbsps Jamaican curry powder
  • 1 (14 oz.) can full-fat coconut milk
  • 1 cup low-sodium chicken stock
  • 13 scotch bonnet peppers (to taste)
  • Vegetables: potatoes, carrots, bell pepper

Instructions

  1. Cut chicken into equal pieces and rinse under cold water.
  2. In a bowl, marinate chicken with Jamaican Green Seasoning, curry powder, salt, smoked paprika, and brown sugar for at least 30 minutes.
  3. Heat olive oil in a pot over medium heat; brown marinated chicken on each side and set aside.
  4. Sauté garlic, ginger, carrots, bell pepper, green onions, potatoes, scotch bonnet peppers, and thyme in the same pot for about 5 minutes.
  5. Return the chicken to the pot; add coconut milk and chicken stock; bring to a boil then reduce heat to low.
  6. Cover and simmer for about 30 minutes until chicken is fully cooked.
