  • 2 cups quick-cook grits
  • 8 oz smoked Gouda cheese (shredded)
  • 8 oz sharp cheddar cheese (shredded)
  • 4 beaten eggs
  • 2 tablespoons butter
  • 1/2 cup Half & Half
  • 1 tsp minced garlic
  • 1/2 tsp salt
  • 1/4 tsp pepper

Instructions

  1. In a 3-quart saucepan, bring chicken broth to a boil. Stir in minced garlic and gradually add quick-cook grits while whisking continuously.
  2. Reduce heat and cook for about 5 minutes until thickened. Remove from heat; stir in butter until melted. Mix in Gouda and cheddar cheeses.
  3. In a separate bowl, whisk together Half & Half, beaten eggs, salt, and pepper. Fold this mixture into the grits until combined.
  4. Preheat oven to 350°F (175°C). Pour the mixture into a greased baking dish and bake for 30–35 minutes until golden brown on top.
