  • 24 oz cream cheese, softened
  • ¾ cup granulated sugar
  • 3 large eggs
  • ½ cup sour cream or Greek yogurt
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 325°F (163°C).
  2. In a mixing bowl, combine graham cracker crumbs, optional sugar, and melted butter; press into the bottom of a springform pan. Bake for 8–10 minutes.
  3. In a large bowl, beat softened cream cheese until smooth; gradually mix in sugar. Add eggs one at a time and blend in sour cream, vanilla extract, and mashed bananas.
  4. Pour the filling over cooled crust; bake in a water bath for 60–70 minutes until edges are set.
  5. Cool at room temperature before chilling in the fridge for at least 4 hours.
  6. Top with fresh banana slices and whipped cream before serving.
