Ingredients

Scale
  • 1 cup fresh or frozen blueberries
  • ½ cup granulated sugar
  • ¼ cup brown sugar
  • ½ cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup powdered sugar (for coating)

Instructions

  1. Create blueberry puree by cooking blueberries in a saucepan over medium heat for 5–7 minutes until jammy. Cool and blend until smooth.
  2. In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2–3 minutes).
  3. Beat in the egg, vanilla extract, and cooled blueberry puree.
  4. In a separate bowl, whisk together flour, baking powder, and salt; gradually incorporate this mixture into the wet ingredients until just combined.
  5. Chill the dough in the refrigerator for at least one hour.
  6. Preheat the oven to 350°F (175°C). Scoop dough balls, roll them in powdered sugar, and place on a parchment-lined baking sheet.
  7. Bake for 10–12 minutes or until slightly spread and crinkled on top; allow cooling for about 5 minutes before transferring to a wire rack.
