Ingredients

  • 1 cup + 2 Tbsp blueberry juice (or grape/apple juice)
  • 1/3 cup granulated sugar
  • 4 tsp cornstarch
  • 1 Tbsp lemon juice

Instructions

  1. In a small saucepan, combine blueberries, 1 cup of juice, and sugar. Stir well and bring to a simmer over medium-high heat.
  2. Reduce heat to low and simmer for 6 to 10 minutes until many blueberries burst.
  3. In a bowl, whisk together the remaining juice and cornstarch. Pour into the pan and simmer for an additional minute while stirring to thicken.
  4. Remove from heat and stir in lemon juice for brightness.
  5. Strain through a mesh sieve for smoothness or blend for a thicker consistency if desired.
