  • 1.5 cups fresh chopped tomatoes
  • 1/2 yellow onion
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp dried thyme
  • 1 lb pasta

Instructions

  1. Preheat oven to 450°F (232°C) and line a baking sheet with parchment paper.
  2. On the baking sheet, combine frozen butternut squash, chopped tomatoes, and sliced onion.
  3. Drizzle with olive oil and season with salt, pepper, and thyme; mix well.

  5. While roasting, cook pasta according to package instructions until al dente; reserve 1/3 cup pasta water before draining.
  6. Blend roasted veggies with reserved pasta water until smooth.
