Ingredients

  • 2 large chicken breasts (or thighs)
  • 1 medium onion
  • 3 cloves garlic
  • 1 red bell pepper
  • 1 jalapeño
  • 2 tablespoons Cajun seasoning
  • 4 ounces cream cheese
  • 5 cups heavy cream
  • 2 cups white beans (cannellini or great northern)
  • 4 cups chicken broth
  • Fresh cilantro for garnish

Instructions

  1. Season the chicken with salt, pepper, and Cajun seasoning. Heat olive oil in a Dutch oven over medium heat.
  2. Sear the chicken until golden brown on both sides (about 5 minutes per side). Remove and set aside.
  3. In the same pot, sauté chopped onion, minced garlic, diced bell pepper, and sliced jalapeño until soft (about 5 minutes).
  4. Pour in the chicken broth and add white beans along with remaining Cajun seasoning. Return shredded chicken to the pot.
  5. Let it simmer for 20–30 minutes to meld flavors.
  6. Stir in cream cheese and heavy cream until melted and smooth. Add lime juice.
  7. Serve hot, garnished with fresh cilantro.
