- 2 large chicken breasts (or thighs)
- 1 medium onion
- 3 cloves garlic
- 1 red bell pepper
- 1 jalapeño
- 2 tablespoons Cajun seasoning
- 4 ounces cream cheese
- 5 cups heavy cream
- 2 cups white beans (cannellini or great northern)
- 4 cups chicken broth
- Fresh cilantro for garnish
Instructions
- Season the chicken with salt, pepper, and Cajun seasoning. Heat olive oil in a Dutch oven over medium heat.
- Sear the chicken until golden brown on both sides (about 5 minutes per side). Remove and set aside.
- In the same pot, sauté chopped onion, minced garlic, diced bell pepper, and sliced jalapeño until soft (about 5 minutes).
- Pour in the chicken broth and add white beans along with remaining Cajun seasoning. Return shredded chicken to the pot.
- Let it simmer for 20–30 minutes to meld flavors.
- Stir in cream cheese and heavy cream until melted and smooth. Add lime juice.
- Serve hot, garnished with fresh cilantro.
