Ingredients
- 9 oz Digestive Biscuits or Graham Crackers
- 1 stick (8 tbsp) Butter
- 2 cups Heavy Whipping Cream
- 9 oz Cream Cheese
- 1/2 cup Powdered Sugar
- 1–2 tsp Peppermint Essence
- 5 crushed Candy Canes
Instructions
- For the crust, crush the biscuits and mix with melted butter until combined. Press into a lined springform pan and chill.
- For the filling, whip the heavy cream until soft peaks form. In another bowl, beat the cream cheese with powdered sugar until fluffy, then gently fold in whipped cream, peppermint essence, and crushed candy canes.
- Pour filling into crust, smooth the top, cover, and refrigerate for at least 4 hours to set.
- Once set, remove from pan and slice. Serve with whipped cream and more crushed candy canes.
