- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 tablespoon unsalted butter (softened)
- 1 large egg yolk
- 1/4 cup white wine (or vinegar)
- Oil for frying
- 1 cup ricotta cheese (drained)
- 1/2 cup powdered sugar
- 1/2 teaspoon vanilla extract
- Optional: mini chocolate chips, chopped pistachios
Instructions
- In a bowl, mix flour, sugar, cinnamon, and salt. Incorporate butter, egg yolk, and wine until dough forms.
- Knead the dough on a floured surface for about 5 minutes. Wrap in plastic and let rest for 30 minutes.
- Roll out dough to 1/8 inch thickness and cut circles using a round cutter.
- Heat oil in a deep skillet to 350°F (175°C). Wrap each dough circle around cannoli tubes and fry until golden (2–3 minutes). Drain on paper towels.
- Mix ricotta, powdered sugar, vanilla, and cinnamon until smooth. Fold in chocolate chips if desired.
- Once shells cool, fill each with ricotta mixture using a piping bag or spoon. Dust with powdered sugar before serving.
