Description

Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 tablespoon unsalted butter (softened)
  • 1 large egg yolk
  • 1/4 cup white wine (or vinegar)
  • Oil for frying
  • 1 cup ricotta cheese (drained)
  • 1/2 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • Optional: mini chocolate chips, chopped pistachios

Instructions

  1. In a bowl, mix flour, sugar, cinnamon, and salt. Incorporate butter, egg yolk, and wine until dough forms.
  2. Knead the dough on a floured surface for about 5 minutes. Wrap in plastic and let rest for 30 minutes.
  3. Roll out dough to 1/8 inch thickness and cut circles using a round cutter.
  4. Heat oil in a deep skillet to 350°F (175°C). Wrap each dough circle around cannoli tubes and fry until golden (2–3 minutes). Drain on paper towels.
  5. Mix ricotta, powdered sugar, vanilla, and cinnamon until smooth. Fold in chocolate chips if desired.
  6. Once shells cool, fill each with ricotta mixture using a piping bag or spoon. Dust with powdered sugar before serving.
