  • 3 ripe bananas, sliced thick
  • 1/2 cup brown sugar
  • 3 tbsp butter
  • 1/3 cup brown sugar (for rum glaze)
  • 2 tbsp butter (for rum glaze)
  • 2 tbsp dark rum
  • 1 tsp cornstarch (optional, for thickening)

Instructions

  1. Preheat oven to 350°F (175°C). Mix graham cracker crumbs, sugar, and melted butter; press into a springform pan and bake for 8 minutes.
  2. Lower oven to 325°F (163°C). Beat cream cheese until smooth; add sugar, eggs one at a time, sour cream, and vanilla. Pour over cooled crust and bake for 55-65 minutes.
  3. Chill cheesecake in the fridge for at least 4 hours.
  4. In a skillet, melt butter and brown sugar; add sliced bananas until golden.
  5. For the rum glaze, melt butter and brown sugar, stir in rum and simmer.
  6. Top chilled cheesecake with caramelized bananas and drizzle with rum glaze before serving.
