- 2 2/3 cups All-purpose flour
- 1 TBSP Cornstarch
- 1 tsp Baking soda
- 1 tsp Salt
- 2 tsp Ground cinnamon
- 1 tsp Ground ginger
- 1/4 tsp Ground nutmeg
- 1/2 tsp Cardamom
- 1/4 tsp Ground cloves
- 1 1/2 cups White granulated sugar
- 2 Large eggs (room temperature)
- 1 tsp Pure vanilla extract
- 1/2 cup White granulated sugar (for coating)
- 1 tsp Ground cinnamon (for coating)
- 1/2 tsp Ground ginger (for coating)
- 1/4 tsp Ground nutmeg (for coating)
- 1/4 tsp Cardamom (for coating)
- 1/4 tsp Ground cloves (for coating)
Instructions
- Melt unsalted butter in a frying pan until amber in color; let cool.
- In a medium bowl, sift together flour, cornstarch, baking soda, salt, and spices.
- In a large bowl, whisk cooled butter with sugar, eggs, and vanilla until smooth.
- Combine dry mixture with wet ingredients using a rubber spatula until thick dough forms.
- Preheat oven to 350°F and line baking sheets with parchment paper.
- Prepare chai sugar coating by mixing sugar with spices.
- Roll dough into balls and coat in chai sugar mixture.
- Place on baking sheets and bake for 13–15 minutes until edges are golden.
- Cool on pan briefly before rolling tops in chai sugar again; transfer to wire rack.
