  • 2 2/3 cups All-purpose flour
  • 1 TBSP Cornstarch
  • 1 tsp Baking soda
  • 1 tsp Salt
  • 2 tsp Ground cinnamon
  • 1 tsp Ground ginger
  • 1/4 tsp Ground nutmeg
  • 1/2 tsp Cardamom
  • 1/4 tsp Ground cloves
  • 1 1/2 cups White granulated sugar
  • 2 Large eggs (room temperature)
  • 1 tsp Pure vanilla extract
  • 1/2 cup White granulated sugar (for coating)
  • 1 tsp Ground cinnamon (for coating)
  • 1/2 tsp Ground ginger (for coating)
  • 1/4 tsp Ground nutmeg (for coating)
  • 1/4 tsp Cardamom (for coating)
  • 1/4 tsp Ground cloves (for coating)

Instructions

  1. Melt unsalted butter in a frying pan until amber in color; let cool.
  2. In a medium bowl, sift together flour, cornstarch, baking soda, salt, and spices.
  3. In a large bowl, whisk cooled butter with sugar, eggs, and vanilla until smooth.
  4. Combine dry mixture with wet ingredients using a rubber spatula until thick dough forms.
  5. Preheat oven to 350°F and line baking sheets with parchment paper.
  6. Prepare chai sugar coating by mixing sugar with spices.
  7. Roll dough into balls and coat in chai sugar mixture.
  8. Place on baking sheets and bake for 13–15 minutes until edges are golden.
  9. Cool on pan briefly before rolling tops in chai sugar again; transfer to wire rack.
