  • 1 tablespoon sake (or water)
  • 1/4 teaspoon baking soda
  • 1 teaspoon cornstarch
  • 1 ½ tablespoons soy sauce
  • 1 tablespoon mirin
  • 1 tablespoon brown sugar (firmly packed)
  • 1 tablespoon oil
  • 1 tablespoon minced garlic
  • 1/2 teaspoon fine salt
  • 2 tablespoons furikake (optional)
  • 1 sheet nori (cut into small rectangles)

Instructions

  1. Prepare the rice by mixing it with fine salt and optional furikake after cooking.
  2. Marinate diced chicken in soy sauce, sake, baking soda, and cornstarch for 30 minutes.
  3. Whisk together soy sauce, mirin, and brown sugar to make the teriyaki sauce.
  4. In a nonstick pan, cook marinated chicken until done; add minced garlic and teriyaki sauce to glaze.
  5. Shape onigiri by placing rice in your palm, adding filling, and forming into triangles; wrap with nori.
