  • 2 tablespoons unsweetened cocoa powder
  • 3 ounces bittersweet chocolate (chopped)
  • 1/2 teaspoon vanilla extract
  • 2 large egg yolks
  • 2 large egg whites
  • 2 tablespoons granulated sugar
  • Pinch of salt
  • Pinch of cream of tartar
  • 5 ounces raspberries (fresh or thawed)

Instructions

  1. Preheat the oven to 375°F (190°C). Grease two ramekins with 1 tablespoon of butter and dust with cocoa powder.
  2. Melt chopped chocolate and 2 tablespoons butter over simmering water; stir until smooth and cool slightly.
  3. Whisk egg yolks and vanilla in a bowl; mix in the melted chocolate mixture until well combined.
  4. In another bowl, beat egg whites until foamy; add salt and cream of tartar. Gradually add sugar until stiff peaks form.
  5. Gently fold one-third of the whipped egg whites into the chocolate mixture, then fold in remaining egg whites until no streaks remain.
  6. Divide batter evenly between ramekins on a baking sheet; bake for about 20 minutes until puffed and set.
  7. For raspberry sauce, cook raspberries and sugar in a saucepan over medium heat until syrupy.
  8. Dust baked soufflés with powdered sugar, serve immediately with raspberry sauce.
