- Pinch of salt
- Pinch of cream of tartar
- 5 ounces raspberries (fresh or thawed)
Instructions
- Preheat the oven to 375°F (190°C). Grease two ramekins with 1 tablespoon of butter and dust with cocoa powder.
- Melt chopped chocolate and 2 tablespoons butter over simmering water; stir until smooth and cool slightly.
- Whisk egg yolks and vanilla in a bowl; mix in the melted chocolate mixture until well combined.
- In another bowl, beat egg whites until foamy; add salt and cream of tartar. Gradually add sugar until stiff peaks form.
- Gently fold one-third of the whipped egg whites into the chocolate mixture, then fold in remaining egg whites until no streaks remain.
- Divide batter evenly between ramekins on a baking sheet; bake for about 20 minutes until puffed and set.
- For raspberry sauce, cook raspberries and sugar in a saucepan over medium heat until syrupy.
- Dust baked soufflés with powdered sugar, serve immediately with raspberry sauce.
