  • 1 lb white fish fillets (cod or tilapia)
  • 14 oz coconut milk
  • 2 tablespoons red curry paste
  • 2 limes (juice and zest)
  • 2 cloves garlic (minced)
  • 1 tablespoon grated fresh ginger
  • 1 cup jasmine rice
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Rinse jasmine rice under cold water until clear. Combine with 2 cups of water in a saucepan, bring to a boil, cover, and simmer for 15 minutes until absorbed.
  2. In another saucepan, heat oil over medium heat. Sauté minced garlic and grated ginger until fragrant.
  3. Stir in red curry paste, then add coconut milk, stirring well.
  4. Add fish fillets and gently simmer for about 10 minutes until cooked through.
  5. Remove from heat; stir in lime juice and zest. Season with salt and pepper.
  6. Serve hot over jasmine rice garnished with fresh cilantro.
