Ingredients

  • 1 ½ tablespoons powdered gelatin
  • ¾ cup canned full-fat coconut milk
  • ¾ cup cream of coconut
  • ¼ teaspoon salt
  • 1 ½ cups heavy whipping cream
  • 2 tablespoons granulated sugar

Instructions

  1. Bloom the gelatin by mixing it with cold water; let it sit for about 5 minutes.
  2. Warm the coconut milk, cream of coconut, and salt in a saucepan until just warm.
  3. Add the bloomed gelatin to the warm coconut mixture and stir until dissolved; cool to room temperature.
  4. Whip the heavy cream and sugar in a bowl until soft peaks form.
  5. Gently fold the cooled coconut mixture into the whipped cream until fully combined.
  6. Pour into serving containers and chill in the refrigerator for at least 4 hours until set.
  7. Serve with your choice of toppings.
