- ¾ cup cream of coconut
- ¼ teaspoon salt
- 1 ½ cups heavy whipping cream
- 2 tablespoons granulated sugar
Instructions
- Bloom the gelatin by mixing it with cold water; let it sit for about 5 minutes.
- Warm the coconut milk, cream of coconut, and salt in a saucepan until just warm.
- Add the bloomed gelatin to the warm coconut mixture and stir until dissolved; cool to room temperature.
- Whip the heavy cream and sugar in a bowl until soft peaks form.
- Gently fold the cooled coconut mixture into the whipped cream until fully combined.
- Pour into serving containers and chill in the refrigerator for at least 4 hours until set.
- Serve with your choice of toppings.
