  • 3 lbs yellow onions
  • 1 cup red wine or beef stock
  • 2 ½ cups beef stock
  • 2 cloves garlic
  • Olive oil
  • 1/2 tsp fine sea salt
  • 1/2 tsp freshly ground black pepper
  • 1 tbsp maple syrup or brown sugar
  • 1 tbsp all-purpose flour or gluten-free all-purpose flour
  • 2 tbsp extra virgin olive oil
  • 1 sprig rosemary
  • 1 bay leaf

Instructions

  1. Preheat a Dutch oven over medium-high heat and add olive oil.
  2. Season chuck roast with salt and pepper; sear on all sides until browned (3-4 minutes per side). Remove and set aside.
  3. In the same pot, add more olive oil and sliced onions; cook on medium-low until caramelized (30-40 minutes), stirring occasionally. Add minced garlic in the last few minutes.
  4. Stir in maple syrup (or brown sugar) and flour; cook for an additional minute.
  5. Pour in red wine (or beef stock), scraping up browned bits from the pot.
  6. Return seared roast to the pot; add beef stock, rosemary sprig, and bay leaf. Bring to a boil, then reduce heat to low and cover.
  7. Simmer gently for about 3 hours until meat is fork-tender.
  8. Remove bay leaf and rosemary before serving; slice or shred as desired.
