Ingredients
- 2 tablespoons Olive Oil
- 1 large Onion
- 3 cloves Garlic
- 1 teaspoon Turmeric
- 6 cups Vegetable Broth
- 1 cup Lentils
- 1 can Chickpeas
- 1 cup Navy Beans
- 1 cup Kidney Beans
- 8 ounces Persian Noodles/Linguine
- 2 cups Spinach
- 1 cup Cilantro
- 1 cup Parsley
- 1 cup Dill
- 1 teaspoon Salt
- 1 teaspoon Pepper
- 1 cup Sour Cream/Yogurt
- 1 cup Fried Onions
Instructions
- In a large pot, heat olive oil over medium heat. Sauté chopped onion until translucent, then add minced garlic and turmeric until fragrant.
- Add lentils, chickpeas, navy beans, kidney beans, and vegetable broth; bring to a boil. Reduce heat to simmer and partially cover.
- Once legumes are tender, stir in the noodles and greens. Cook until noodles are tender.
- Season with salt and pepper before serving. Top with sour cream or yogurt and crispy fried onions.
