  • 1 cup orzo pasta
  • 2 cups low-sodium chicken broth

  • Zest of 1 lemon

  • ½ teaspoon dried thyme
  • ¼ teaspoon crushed red pepper flakes (optional)
  • ½ cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Season chicken with salt and pepper. In a large deep skillet, heat olive oil over medium-high heat and sauté the chicken until golden and cooked through, about 5-7 minutes. Remove from skillet.
  2. In the same skillet, reduce heat to medium and melt butter. Add chopped onion and cook until translucent, about 3 minutes. Stir in minced garlic and orzo; toast for 1-2 minutes.
  3. Pour in chicken broth while scraping browned bits from the skillet. Add heavy cream, lemon zest, lemon juice, thyme, and crushed red pepper flakes (if desired). Simmer gently.
  4. Return chicken to the pan and cook uncovered until orzo is tender and sauce thickens, about 10-12 minutes.
  5. Stir in Parmesan cheese and parsley; adjust seasoning if needed. Serve warm with additional parsley and lemon slices.
