  • 2 shallots, thinly sliced
  • 2 cloves garlic, minced
  • 2 cans butter beans, drained and rinsed
  • 1 1/2 cups vegetable stock
  • 1 tablespoon white miso paste
  • 1/2 cup whole cream or coconut cream
  • 3 cups packed baby spinach
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon ground black pepper
  • 2 tablespoons lemon juice

Instructions

  1. In a large skillet over medium-high heat, warm the olive oil.
  2. Add the sliced shallots and sauté for about 3 to 5 minutes until translucent.
  3. Stir in the minced garlic and cook for an additional 30 seconds.
  4. Add the rinsed butter beans, vegetable stock, and miso paste. Stir until the miso dissolves completely. Simmer for about 10 minutes.
  5. Mix in the cream (or coconut cream) and simmer for another 5 minutes until heated through.
  6. Fold in the spinach, salt, and pepper; remove from heat once the spinach wilts.
  7. Stir in lemon juice before serving.
