  • 2 cups grilled or roasted corn
  • 4 ounces cream cheese
  • 1/3 cup sour cream
  • 3/4 cup crumbled cotija cheese
  • Fresh herbs (basil and cilantro)
  • Spices (smoked paprika, chili powder, cayenne pepper)
  • Avocado

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside to cool.
  2. Grill or roast fresh corn until slightly charred; allow to cool before cutting off kernels.
  3. In a large bowl, mix cream cheese, sour cream, olive oil, garlic, chives, salt, and pepper until smooth.
  4. Fold in cooled pasta and roasted corn along with shredded romaine lettuce, basil leaves, cilantro, spicy cheddar cheese, diced avocado, and crumbled cotija cheese.
