  • 2 lbs baby potatoes, halved
  • 6 slices bacon, chopped
  • 3 tbsp olive oil
  • 2 tbsp honey
  • 1 tsp garlic powder
  • ½ tsp smoked paprika
  • Salt and black pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Wash and dry the baby potatoes, then cut them in half.
  3. Chop the bacon into small pieces.
  4. In a large mixing bowl, combine the halved potatoes with olive oil, garlic powder, smoked paprika, salt, and black pepper. Toss well to coat.
  5. Spread the potato mixture evenly on the prepared baking sheet and scatter the chopped bacon over it.
  6. Roast in the preheated oven for 30-35 minutes, flipping halfway through for even crispiness.
  7. Drizzle honey over the potatoes during the last 5 minutes of roasting until caramelized.
  8. Remove from oven and let cool slightly before serving.
