  • ½ cup all-purpose flour (or gluten-free)
  • 1 cup cornflakes
  • 4 bread rolls
  • 1 avocado
  • ½ cup cilantro
  • 3 Tbsp lime juice
  • 1 cup sour cream

Instructions

  1. Prepare the cilantro-lime sauce by blending olive oil, avocado, cilantro, adobo sauce, lime juice, honey, sour cream, and pepper until smooth. Refrigerate.
  2. Make the cucumber salad by mixing mayonnaise, apple cider vinegar, honey, garlic powder, and red pepper flakes in a bowl. Add sliced cucumbers and cabbage; toss.
  3. Dredge chicken pieces in seasoned flour, dip in beaten eggs, then coat with crushed cornflakes.
  4. Cook the chicken: air fry at 360ºF for 14-16 minutes or bake at 425ºF for 15-20 minutes until golden brown.
