Ingredients

Scale
  • 4 medium-sized russet potatoes
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and dry the potatoes thoroughly. Pierce each potato multiple times with a fork.
  3. Bake potatoes directly on the oven rack or on a baking sheet for about 30 minutes until tender.
  4. Remove from the oven, cool slightly, then cut in half lengthwise and scoop out most of the flesh.
  5. In a mixing bowl, combine olive oil, minced garlic, oregano, thyme, salt, and pepper. Brush this mixture over the potato skins.
  6. Place seasoned skins back on a baking sheet and roast for an additional 10-15 minutes until crispy.
  7. Optional: Add cheese during the last few minutes of roasting for extra flavor.
