Ingredients
- 600 g (1.3 lbs) potatoes, peeled and grated
- 200 g (7 oz) champignon mushrooms, sliced
- 150 g (5 oz) baby spinach
- 180 g (6 oz) mozzarella cheese, grated
- 2 large eggs
- 30 g (¼ cup) Parmesan cheese, grated
- Olive oil, salt, pepper, parsley, garlic, green onion, and dried oregano
Instructions
- Preheat oven to 180°C (350°F).
- Grate the potatoes, squeeze out excess moisture, then mix with mozzarella cheese, eggs, parsley, salt, pepper, oregano, and olive oil.
- In a frying pan over medium heat with olive oil, sauté chopped green onion and minced garlic until fragrant. Add mushrooms until soft; stir in spinach until wilted. Season with salt and pepper.
- Grease a baking dish and layer half of the potato mixture as the crust base. Spread the cooked filling on top along with mozzarella fior di latte pieces. Finish with remaining potato mixture.
- Bake for about 55 minutes until golden brown.
