  • 2 medium apples (Granny Smith or Honeycrisp), cored and diced
  • 1 cup red cabbage, finely shredded
  • 1/2 cup raisins or dried cranberries
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup walnuts or pecans, chopped
  • 1/4 cup plain Greek yogurt
  • 1/4 cup mayonnaise
  • 2 tablespoons fresh orange juice
  • 1 tablespoon lemon juice
  • 1 teaspoon honey (or to taste)
  • Salt and pepper to taste

Instructions

  1. Grate the carrots into a large mixing bowl.
  2. Core and dice the apples, adding them immediately to prevent browning.
  3. Shred the red cabbage and add it to the bowl along with raisins or dried cranberries, walnuts or pecans, and parsley.
  4. In a separate small bowl, whisk together Greek yogurt, mayonnaise, orange juice, lemon juice, honey, salt, and pepper until smooth.
  5. Pour the dressing over the salad mixture and gently toss until well-coated.
  6. Taste and adjust seasoning if necessary.
