  • 2 cups red cabbage, thinly sliced
  • 1 cup shredded carrots
  • 3 green onions, thinly sliced
  • 2 tablespoons toasted sesame oil
  • 2 tablespoons soy sauce (low sodium)
  • 1½ tablespoons rice vinegar
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon fresh grated garlic
  • 1 teaspoon fresh grated ginger
  • 1 teaspoon Dijon mustard (optional)
  • 1 tablespoon sesame seeds

Instructions

  1. In a small bowl, whisk together toasted sesame oil, soy sauce, rice vinegar, honey or maple syrup, grated garlic, grated ginger, and Dijon mustard (if using). Set aside.
  2. In a large mixing bowl, combine thinly sliced green cabbage, red cabbage, shredded carrots, and sliced green onions.
  3. Pour the dressing over the vegetable mixture and toss with tongs until evenly coated.
  4. Allow the slaw to rest for 10–15 minutes for flavors to meld while keeping veggies crisp.
