- 1/2 teaspoon cajun or creole spice mix

Instructions
- Prepare the coating mixture by combining flour, cornmeal, salt, black pepper, cayenne spice, and sugar in one bowl. In another bowl, whisk together milk and egg.
- Coat each slice of green tomato first in the milk mixture and then dredge in the flour-cornmeal mixture until evenly coated.
- Heat oil in a skillet over medium heat and fry coated tomato slices for 3-4 minutes on each side until golden brown. Drain on paper towels.
