- 2 cups water
- 1 medium carrot, grated
- 1 bell pepper, diced
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- Salt and pepper to taste
- 1/2 cup breadcrumbs
Instructions
- Rinse quinoa under cold water; bring 2 cups of water to boil in a pot.
- Add rinsed quinoa, reduce heat to low, cover, and simmer for about 15 minutes until liquid is absorbed.
- In a mixing bowl, combine cooked quinoa with grated carrot, diced bell pepper, chopped onion, minced garlic, cumin, salt and pepper; stir in breadcrumbs.
- Form the mixture into small patties (about 2 inches wide) and place on a parchment-lined baking sheet.
- Preheat oven to 375°F (190°C) and bake patties for 20-25 minutes until golden brown.
