Ingredients
- 2 pounds shrimp (peeled and deveined)
- 1 English cucumber (small diced)
- 3 green onions (thinly sliced)
- â…“ cup mayonnaise
- â…“ cup sour cream
- Zest and juice of 1 large lime
- 2 tablespoons chopped fresh dill
- 1 tablespoon Dijon mustard
- 1 minced garlic clove
- ¼ teaspoon kosher salt
Instructions
- In a mixing bowl, combine the mayonnaise, sour cream, lime zest and juice, dill, Dijon mustard, minced garlic, and salt. Mix well and set aside.
- Bring a pot of water to a boil. Add the shrimp and cook for 2 to 3 minutes until they turn pink.
- Prepare an ice water bath in a separate bowl. After cooking the shrimp, transfer them to the ice water bath for about 3 minutes to cool down before draining.
- Chop the cooled shrimp into bite-sized pieces. In a mixing bowl, combine the shrimp with diced cucumber and green onions.
- Pour the dressing over the salad ingredients and stir gently until everything is well coated.
