  • 8 small tortillas
  • 1 cup shredded mozzarella or Monterey Jack cheese
  • 1 cup shredded cabbage
  • ½ cup chopped dill pickles
  • ½ cup cottage cheese
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and black pepper to taste
  • 2 tbsp pickle brine
  • 1 tsp ranch seasoning
  • Juice from ½ lemon

Instructions

  2. Heat a skillet over medium heat and add one tortilla.

  5. Flip the taco to cook for an additional 3-4 minutes or until golden brown.
  6. In another bowl, mix shredded cabbage, chopped pickles, and pickle brine to prepare the slaw.
  7. Blend cottage cheese with ranch seasoning and lemon juice for the drizzle.
  8. Assemble tacos by layering slaw on each taco followed by the cooked chicken patty and ranch drizzle.
