  • 1 lb salmon, cubed
  • 1 ½ cups uncooked sushi rice
  • 3 large nori sheets
  • 1 tbsp light soy sauce
  • 1 tbsp Kewpie mayo
  • 1 tbsp sriracha
  • 1 tbsp rice vinegar
  • 2 tsp white sugar
  • 1 tsp sesame oil
  • Furikake, for garnish
  • 1 green onion, for garnish
  • Cooking spray

Instructions

  1. Cook sushi rice according to package instructions until fluffy.
  2. In a microwave-safe bowl, combine rice vinegar and sugar; microwave until sugar dissolves. Pour over the cooked rice and mix well.
  3. Preheat the oven to 400℉ (200℃).
  4. In a mixing bowl, combine cubed salmon with soy sauce, Kewpie mayo, sriracha, and sesame oil; mix well.
  5. Cut nori sheets into squares that fit muffin tin slots.
  6. Grease muffin tin with cooking spray; add a spoonful of sushi rice into each nori square and press down lightly.
  7. Top each with the salmon mixture.
  8. Bake for about 15 minutes until the salmon is cooked through and tops are golden brown.
