  • 2 tablespoons confectioners’ sugar
  • 1 cup whipping cream
  • 1 tablespoon confectioners’ sugar
  • Seeds from a vanilla bean or 1-2 teaspoons vanilla bean paste

Instructions

  1. 1. Preheat oven to 350°F (175°C). In a bowl, mix crushed graham cracker crumbs, sugar, egg yolk, vanilla flavoring, and melted butter. Press into the bottom of a springform pan and bake for 10 minutes. Let cool.
  2. 2. In another bowl, beat softened cream cheese and sour cream until smooth. Add cornflour, sugar, and vanilla; mix well before pouring over the cooled crust.
  3. 3. Bake for approximately 38 minutes until the edges are set but the center is slightly jiggly. Cool gradually in the oven with the door ajar for one hour.
  4. 4. For the mousse layer, whip cream with confectioners’ sugar until soft peaks form. Beat softened cream cheese with melted white chocolate until smooth; fold in whipped cream.
  5. 5. Pour mousse over cooled cheesecake and refrigerate for at least four hours or overnight.
