- Seeds from a vanilla bean or 1-2 teaspoons vanilla bean paste
Instructions
- 1. Preheat oven to 350°F (175°C). In a bowl, mix crushed graham cracker crumbs, sugar, egg yolk, vanilla flavoring, and melted butter. Press into the bottom of a springform pan and bake for 10 minutes. Let cool.
- 2. In another bowl, beat softened cream cheese and sour cream until smooth. Add cornflour, sugar, and vanilla; mix well before pouring over the cooled crust.
- 3. Bake for approximately 38 minutes until the edges are set but the center is slightly jiggly. Cool gradually in the oven with the door ajar for one hour.
- 4. For the mousse layer, whip cream with confectioners’ sugar until soft peaks form. Beat softened cream cheese with melted white chocolate until smooth; fold in whipped cream.
- 5. Pour mousse over cooled cheesecake and refrigerate for at least four hours or overnight.
