- 1 lb enoki mushrooms
- 1/2 cup (60 g) all-purpose flour
- 1/3 cup (55 g) potato starch
- 1/2 teaspoon baking powder
- 1 teaspoon salt
- 1/4 teaspoon white pepper
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon five spice powder
- 3/4 cup cold sparkling water
- Neutral oil (for deep frying)
- Salt
- Furikake
- Sweet chili sauce
- Sriracha mayo
Instructions
- Prepare the enoki mushrooms by cutting off the dirt end and slicing them into thin layers.
- Heat 2–3 inches of neutral oil in a heavy-bottomed pot until it reaches 375°F (190°C).
- In a mixing bowl, whisk together flour, potato starch, baking powder, and seasonings. Gradually add cold sparkling water until you achieve a batter that coats the mushrooms lightly.
- Dredge each mushroom bunch in the batter, allowing excess to drip off before frying.
- Carefully fry the battered mushrooms in small batches for 1-2 minutes until golden brown. Use a spider strainer to remove and drain on a wire rack.
- Season immediately with salt and serve with dipping sauces of your choice.
