- 4 cups chicken broth

- 1 cup grated Parmesan cheese
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- Salt and pepper to taste
- Fresh parsley for garnish
- 2 cups fresh spinach or kale (optional)
Instructions
- Heat olive oil in a large pot over medium heat. Sauté onion for 5 minutes until softened, then add minced garlic and cook for an additional 1-2 minutes.
- Add chicken pieces to the pot, season with salt and pepper, and cook for 5-7 minutes until golden brown.
- Pour in chicken broth with thyme and basil; bring to a boil, then reduce heat to simmer for 10-15 minutes.
- Lower heat again; stir in heavy cream and Parmesan cheese gradually until melted. Optionally mix in spinach or kale until wilted.
- Taste soup; adjust seasoning if necessary before serving hot, garnished with extra Parmesan and parsley.
