Instructions
- Prepare plantains: Peel and cut into 1–2 inch pieces. Boil in water until tender (10–15 minutes) or fry for extra flavor.
- Mash mofongo: In a mortar and pestle, combine boiled plantains with minced garlic, olive oil, and optional chicharrón. Season with salt and pepper.
- Cook garlic shrimp: In a skillet over medium heat, sauté remaining minced garlic in olive oil until fragrant. Add shrimp; season with salt and pepper. Cook until pink (3–4 minutes per side).
- Assemble dish: Mold mofongo into bowls or plates, top with garlic shrimp, and drizzle with pan juices.
