  • 1 lb medium shrimp, peeled and deveined
  • 8 cloves garlic (4 for mofongo, 4 for shrimp)
  • Olive oil or butter
  • Optional: pork cracklings (chicharrón), lime wedges, cilantro

Instructions

  1. Prepare plantains: Peel and cut into 1–2 inch pieces. Boil in water until tender (10–15 minutes) or fry for extra flavor.
  2. Mash mofongo: In a mortar and pestle, combine boiled plantains with minced garlic, olive oil, and optional chicharrón. Season with salt and pepper.
  3. Cook garlic shrimp: In a skillet over medium heat, sauté remaining minced garlic in olive oil until fragrant. Add shrimp; season with salt and pepper. Cook until pink (3–4 minutes per side).
  4. Assemble dish: Mold mofongo into bowls or plates, top with garlic shrimp, and drizzle with pan juices.
