  • 2 lbs boneless, skinless chicken thighs

  • 2 tablespoons fresh lemon juice

  • 68 warm pita bread wraps
  • Shredded lettuce
  • Diced tomatoes
  • Sliced cucumber
  • Thinly sliced red onion

Instructions

  1. In a large bowl, whisk together the Greek yogurt, minced garlic, lemon juice, olive oil, oregano, cumin, paprika, coriander, salt, and pepper.
  2. Add the chicken thighs to the marinade and coat well. Cover and refrigerate for at least 2 hours or overnight.
  3. For the tzatziki sauce: Grate the cucumber and squeeze out excess moisture. Mix with Greek yogurt, garlic, lemon juice, olive oil, dill, feta cheese, salt, and pepper in a medium bowl.
  4. Preheat the grill or grill pan to medium-high heat. Grill the marinated chicken for about 6–7 minutes per side until cooked through (165°F internal temperature). Let rest for five minutes before slicing.
