  • 4 tbsp breadcrumbs
  • 1 egg
  • 1 tsp salt
  • 1 tsp coarsely ground black pepper
  • 1 shallot (grated)
  • 1 tbsp olive oil
  • 1 tbsp unsalted butter
  • 2 shallots (diced)
  • 2 garlic cloves (minced)
  • 1 tbsp yellow mustard
  • ½ tsp salt
  • 1 tsp coarsely ground black pepper
  • 1 tbsp all-purpose flour
  • ½ cup whiskey
  • ½ cup beef broth
  • 1 cup cream (20% fat or heavy cream)
  • 2 tbsp chopped chives

Instructions

  1. In a mixing bowl, combine ground beef, egg, breadcrumbs, salt, pepper, and grated shallot. Shape into four patties.
  2. Heat olive oil and butter in a skillet over medium-high heat. Sear patties for about five minutes on each side until browned. Remove from skillet.
  3. In the same skillet, sauté diced shallots and minced garlic until fragrant. Add mustard, salt, pepper, and flour; stir well.
  4. Deglaze with whiskey and add beef broth; simmer briefly. Stir in cream and return patties to the skillet. Simmer for an additional five minutes.
  5. Garnish with chopped chives before serving.
