  • 1 Strawberry Cake Mix (15 oz)
  • 1 1/2 cups Guava Nectar or Guava Juice (Kern’s, Jumex, or Goya)
  • 3 eggs (room temperature)
  • 1/3 cup Coconut Oil (liquid)
  • 10 oz Cream Cheese (room temperature)
  • 1/2 cup granulated sugar
  • 1 teaspoon Vanilla extract
  • 8 oz Cool Whip (thawed)
  • 2 1/2 cups Guava Nectar or Guava Juice (Pink is better)
  • 1/2 cup granulated sugar
  • 4 tablespoons Cornstarch
  • 3 tablespoons Water
  • 4 tablespoons sweetened Coconut Flakes (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the strawberry cake mix, guava nectar, eggs, and coconut oil. Mix on medium speed for 2 minutes until well blended.
  3. Pour the batter into a greased 9×13 inch baking pan and bake for 25 minutes or until a toothpick comes out clean.
  4. In another bowl, beat cream cheese with sugar and vanilla extract until smooth, then fold in Cool Whip.
  5. Once cooled, spread the cream cheese mixture over the cake and chill.
  6. For the glaze, heat guava nectar with sugar in a saucepan; mix cornstarch with water and add it to thicken. Cool slightly before pouring over the cake.
  7. Garnish with coconut flakes if desired.
