- 1 1/2 cups Guava Nectar or Guava Juice (Kern’s, Jumex, or Goya)
- 3 eggs (room temperature)
- 1/3 cup Coconut Oil (liquid)
- 10 oz Cream Cheese (room temperature)
- 1/2 cup granulated sugar
- 1 teaspoon Vanilla extract
- 8 oz Cool Whip (thawed)
- 2 1/2 cups Guava Nectar or Guava Juice (Pink is better)
- 1/2 cup granulated sugar
- 4 tablespoons Cornstarch
- 3 tablespoons Water
- 4 tablespoons sweetened Coconut Flakes (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the strawberry cake mix, guava nectar, eggs, and coconut oil. Mix on medium speed for 2 minutes until well blended.
- Pour the batter into a greased 9×13 inch baking pan and bake for 25 minutes or until a toothpick comes out clean.
- In another bowl, beat cream cheese with sugar and vanilla extract until smooth, then fold in Cool Whip.
- Once cooled, spread the cream cheese mixture over the cake and chill.
- For the glaze, heat guava nectar with sugar in a saucepan; mix cornstarch with water and add it to thicken. Cool slightly before pouring over the cake.
- Garnish with coconut flakes if desired.
