  • ¼ cup water
  • 2 tsp powdered gelatin
  • 2 tbsp cold water

Instructions

  1. In a saucepan, heat raspberries, sugar, and lemon juice until softened. Strain through a fine sieve.
  2. Bloom gelatin in cold water for 5 minutes.
  3. Combine warm raspberry purée with dissolved gelatin and fold in whipped cream until smooth.
  4. Fill heart-shaped molds and freeze for at least 4 hours.
  5. Prepare mirror glaze by melting white chocolate with sweetened condensed milk and water; mix in bloomed gelatin and color.
  6. Pour cooled glaze over frozen mousse hearts and refrigerate before serving.
