- 4 bell peppers (any color)
- 1 Tbsp olive oil
- 4 cups fresh spinach
- 15 oz ricotta cheese
- 1 cup shredded mozzarella cheese
- ½ cup grated parmesan cheese
- ½ cup sliced green onions
- ½ cup chopped fresh basil
- 2 large eggs
- ½ cup breadcrumbs
Instructions
- Preheat oven to 400°F (204°C). Cut bell peppers in half lengthwise and remove seeds. Place cut-side up on a parchment-lined baking sheet, brush with olive oil, and bake for 20 minutes.
- Microwave spinach until wilted, chop it, then mix with ricotta, mozzarella, parmesan, green onions, basil, eggs, herbs, salt, and pepper in a bowl.
- Fill each pepper half with the ricotta mixture and sprinkle breadcrumbs on top.
- Bake at 350°F (176°C) for another 30 minutes until golden brown.
