  • 14 oz rotini pasta
  • 1 large cucumber, diced
  • 1.5 cups tomatoes, halved
  • 1 yellow bell pepper, diced
  • 1/4 cup red onion, finely diced
  • 1/2 cup spinach, chopped
  • Juice of 1 lemon
  • 1/2 cup Italian dressing
  • 1 pinch oregano
  • 1.5 cups cottage cheese
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta in boiling water until al dente, then drain and cool.
  2. While the pasta cools, prepare the vegetables by dicing the cucumber, yellow bell pepper, and red onion; halve the tomatoes; and chop the spinach.
  3. In a mixing bowl, combine cooled pasta with all prepared vegetables.
  4. Add cottage cheese, Italian dressing, oregano, salt, pepper, and squeeze in fresh lemon juice.
  5. Toss gently until well mixed. Chill before serving for best flavor.
