Ingredients
- 900 g cherry tomatoes
- 454 g dried angel hair pasta
- ½ cup extra virgin olive oil
- 6 tbsp minced garlic
- 18 large basil leaves
- 1½ cups grated Parmesan cheese
- Salt and pepper to taste
Instructions
- In a mixing bowl, combine halved cherry tomatoes with salt, minced garlic, and red pepper flakes. Let marinate for at least 10 minutes.
- Meanwhile, cook the angel hair pasta in salted boiling water until al dente (3–5 minutes). Drain and rinse with cold water.
- Add the cooked pasta to the tomato mixture along with the olive oil. Toss gently to combine.
- Transfer to a serving dish and garnish with julienned basil and grated Parmesan cheese. Serve warm or chilled.
