  • 0.25 cups granulated sugar
  • 6 tablespoons melted butter
  • 1 cup fresh or frozen raspberries
  • 12 ounces white chocolate
  • 24 ounces cream cheese
  • 3 large eggs
  • 1 cup sour cream

Instructions

  1. Preheat oven to 325°F (163°C). Combine graham cracker crumbs, sugar, and melted butter in a bowl and press into a springform pan to form the crust.
  2. Mix raspberries, sugar, and lemon juice in another bowl until chunky; set aside.
  3. Melt white chocolate and let cool slightly. In a large bowl, beat cream cheese until smooth, then add sugar and mix well. Incorporate eggs one at a time, followed by vanilla extract, sour cream, heavy cream, and melted white chocolate.
  4. Pour half of the cheesecake filling over the crust, dollop raspberry mixture on top, swirl gently with a knife, then pour remaining filling over it.
  5. Bake for about 70 minutes until set but slightly jiggly in the center. Cool at room temperature before refrigerating for at least 6 hours.
