- ¼ teaspoon nutmeg (optional)
- ¼ teaspoon salt
- ½ cup raisins or sultanas (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish.
- In a medium saucepan, bring 1½ cups of water to a boil. Add the rice, cover, and simmer for 10–12 minutes until tender. Drain and cool slightly.
- In a large mixing bowl, whisk together whole milk, sweetened condensed milk, vanilla extract, cinnamon, nutmeg, and salt. In a separate bowl, beat the eggs and gradually mix into the custard mixture.
- Spread cooked rice in the greased dish, sprinkle with raisins if using, then pour the custard mixture over the rice. Gently stir to combine.
- Place the baking dish in a larger pan filled with hot water (water bath) and bake for 45–55 minutes until golden brown and slightly jiggly in the center.
