  • 1 lb pasta
  • 1 cup marinated artichokes
  • 1 cup black olives
  • 1 cup stuffed green olives
  • 1 cup pepperocini
  • 1 cup ham
  • 1 cup salami
  • 1 cup onion (thinly sliced)
  • 1 cup grated Parmesan cheese
  • 3/4 cup olive oil
  • 1/4 cup rice wine vinegar
  • 1/4 cup lemon juice
  • 1 teaspoon garlic (minced)
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes
  • 1 teaspoon salt

Instructions

  1. Cook pasta according to package directions in a large pot of salted boiling water until al dente. Drain and rinse under cold water.
  2. While the pasta cooks, chop the artichokes, olives, pepperocini, ham, and salami.
  3. In a jar with a lid, combine olive oil, rice wine vinegar, lemon juice, garlic, onion powder, oregano, basil, red pepper flakes, and salt. Shake well until emulsified.
  4. In a mixing bowl or pot, combine cooked pasta with chopped ingredients. Mix gently to combine.
  5. Pour half the dressing over the salad and toss well. Add parsley and cheese; pour on remaining dressing and mix again.
