- 8 large collard green leaves
- 4 ounces shirataki noodles
- 1 lb shrimp (deveined and peeled)
- 1 cup thinly sliced cabbage

- 1 cucumber (cut into matchsticks)

- 2 teaspoons toasted sesame oil
- 2 cloves garlic
- 1/2 teaspoon fine sea salt
- 2 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 2 tablespoons water (as needed)
- 2 tablespoons lime juice
- 1 tablespoon sesame oil
- 2 tablespoons granular erythritol
- 1 teaspoon ginger (minced)
- ¼ cup green onions (thinly sliced)
- ¼ cup fresh cilantro (chopped)
- ¼ cup fresh mint (chopped)
Instructions
- Blanch collard greens in boiling water for about 15 seconds until they soften. Pat dry.
- Rinse shirataki noodles, then sauté with sesame oil and garlic in a pan until heated through.
- In a bowl, whisk together the peanut sauce ingredients until smooth.
- Lay each collard green flat, add sauce and filling ingredients, then roll tightly.
